- 1 cup vegetable oil
- 12 corn tortillas
- 4 1/2 cups chicken broth
- 2 cups of chicken cooked and shredded
- 1 glass of red mole paste
- 1 cup of La Vaquita® Crema Mexicana
- 1 cup of La Vaquita® Queso Fresco crumbled
- 1/2 cup sliced onion
- In a saucepan, add the oil and heat it very well. Fry the tortillas lightly; place them on absorbent paper.
- Put the chicken stock in a pot, boil it and add the paste. Dissolve it until the red mole is liquid.
- Heat the chicken in another skillet.
- Dip each of the tortillas in the hot red mole, and put a small amount of shredded chicken in the center of each one.
- Add onion, La Vaquita® Crema Mexicana and La Vaquita® Queso Fresco to taste. Serve immediately.
