1 cup vegetable oil
12 corn tortillas
4 1/2 cups chicken broth
2 cups of chicken cooked and shredded
1 glass of red mole paste
1 cup of La Vaquita® Crema Mexicana
1 cup of La Vaquita® Queso Fresco crumbled
1/2 cup sliced onion
In a saucepan, add the oil and heat it very well. Fry the tortillas lightly; place them on absorbent paper.
Put the chicken stock in a pot, boil it and add the paste. Dissolve it until the red mole is liquid.
Heat the chicken in another skillet.
Dip each of the tortillas in the hot red mole, and put a small amount of shredded chicken in the center of each one.
Add onion, La Vaquita® Crema Mexicana and La Vaquita® Queso Fresco to taste. Serve immediately.
