Our story began with a simple wish: to enjoy cheeses and creams with authentic Mexican flavor in the United States. This is why, in 1971, Maria Castro, newly immigrated from the state of San Luis Potosi, Mexico, began making Queso Fresco in her Houston home. Her artisanal, small-batch process was based on a recipe she learned from her mother on their family farm in Mexico. Word soon spread about the authenticity and quality of her cheese, and Maria eventually began making it for her friends, neighbors, and others in the community.
