Roast guajillo peppers and soak them in water until tender.
Blend peppers with a bit of the soaking water to make the sauce.
Mix guajillo sauce with La Vaquita® Queso Cotija. Set aside.
Mix lard, salt and corn flour in a bowl, and add water little by little until you get a smooth dough that is easy to knead.
Roll a bit of the masa into a small ball and fill the center with the cheese and guajillo mixture.
Pinch dough together with your fingers to seal the filling inside and flatten the ball gently to form a small disc shape.
Fry godita in very hot oil and turn over to brown both sides.
When ready to serve, open the side of each gordita and add a bit of spicy salsa and the perfect crumble of the traditional La Vaquita® Queso Fresco. Bon appetit!
